Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Aviyal Recipe

  • Coconut scraped 1/2 cup

  • Carrot cut into batons 1 medium

  • Ash gourd (petha) cut into batons 200 grams

  • Raw banana cut into batons 1 medium

  • French beans cut into batons 6-8

  • Broad beans (sem ki phalli/papdi) cut into batons 6-8

  • Drumsticks cut into batons 1

  • Green peas shelled 1/4 cup

  • Curry leaves 10-12

  • Salt to taste

  • Yogurt 1 1/2 cups

  • Coconut oil 2 tablespoons

  • Yam cut into batons 100 grams

  • Green chillies chopped 4

  • Cumin seeds 1 1/2 teaspoons

  • Rice 1 tablespoon

Method

Step 1

Grindhalf cup scraped coconut,four green chillies,one and a half teaspoons of cumin seeds and one tablespoon of rice to a fine paste.

Step 2

Whisk in yogurt and keep aside. Boil yam separately in salted water. Drain and reserve.

Step 3

Boil carrot, white pumpkin, raw banana, French beans, broad beans, drumstick, peas and curry leaves in one and half cups of salted water.

Step 4

When vegetables are almost done, add yogurt mixture and boiled yam and stir thoroughly.

Step 5

Bring to simmering point and remove from heat. Lace with coconut oil and serve.
