There are a number of popular vegetarian recipes in India, but aloo matar is probably the most commonly prepared one. Easy availability of the basic ingredients – potatoes and green peas, the simplicity of making this dish along with the fact that it is really tasty all contribute to the popularity of this one. Chunks of aloo and matar are cooked in a simple but packed with flavour spice base. Great to eat along with garma garam roti’s or alongwith some hot dal-chawal. This aloo matar sabzi is exactly what you need to make even the simplest of meals the most delicious ones.

Ingredients for Aloo Matar Recipe

  • Potatoes 1 cm cubes (boiled) 4 medium

  • Green peas shelled (blanched) 1 1/4 cups

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Ginger juliennes 1 inch piece

  • Green chillies slit 1

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 1 1/2 teaspoons

  • Garam masala powder 1 teaspoon

  • Salt to taste

  • Fresh coriander leaves 2 tablespoons


Step 1

Heat oil in a pan over medium heat. Add cumin seeds and when it crackles add ginger and green chillies, stir-fry for a minute. Add green peas, potatoes and stir fry till for 2 minutes.

Step 2

Add red chilli powder, turmeric powder, and coriander powder and stir-fry at slow heat till the spices blend well with the vegetables.

Step 3

Add salt and garam masala powder and finish with chopped coriander leaves.
