How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Aloo Gobhi Ki Tahiri Recipe

  • Rice 1 1/2 cups

  • Potatoes cubed 1 medium

  • Cauliflower separated into florets 1/2 medium

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Bay leaf 1

  • Cinnamon 1 inch sticks

  • Black cardamom 1

  • Cloves 4-5

  • Onion ,sliced 1 medium

  • Green peas shelled 1/2 cup

  • Turmeric powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1 teaspoon

  • Salt to taste


Step 1

Soak rice in three cups of water for fifteen to twenty minutes. Drain and keep aside. Heat oil in vessel, add cumin seeds, bay leaf, cinnamon, black cardamom, peppercorns and cloves.

Step 2

When they change colour add onion and sauté till light brown. Add potato, cauliflower and green peas and sauté on medium heat for two minutes. Add rice, turmeric powder, red chilli powder, garam masala powder and salt along with three cups of hot water.

Step 3

Cover and cook on low heat for fifteen to twenty minutes or till rice is done. Serve hot.
