Ingredients for Watermelon and Fresh Mozarella Salad Recipe

  • Watermelon quartered, peeled, seeded and cut into cubes 1 small

  • Mozzarella cheese balls 8-12

  • Balsamic vinegar ½ cup

  • Castor sugar (caster sugar) 1 tablespoon

  • Fresh basil leaves 8-12 as required

  • Mixed beetroot and sunflower micro greens as required

Method

Step 1

Heat balsamic vinegar in a non-stick pan. Add castor sugar, swirl and cook till the mixture reduces slightly.

Step 2

Place one cheese ball on each basil leaf and insert in a plastic skewer along with a watermelon cube.

Step 3

Place some mixed micro greens on a serving platter and place skewered cheese balls-watermelon on one side.

Step 4

Drizzle some balsamic reduction over the skewers and micro greens and serve immediately.
