Ingredients for Tuna Pasta Salad Recipe

  • Tuna fish (canned) ½ cup

  • Pasta penne, boiled 1 cup

  • Avocado 1

  • Red wine vinegar 1 tablespoon

  • Mustard paste grainy 1 teaspoon

  • Salt to taste

  • Crushed black peppercorns to taste

  • Olive oil 2 tablespoons

  • Cherry tomatoes halved 8-10

  • Celery finely chopped 1 inch

  • Carrot cut into roundels and blanched 1 medium

  • Radish cut into thin roundels 1 medium

  • Spring onion bulbs sliced 2-3

  • Pecan nuts ¼ cup

  • mixed micro greens ¼ cup

  • Iceberg lettuce leaves 6-8

Method

Step 1

Remove the seed from the avocado and scoop out its flesh and put into a bowl.

Step 2

To prepare dressing, take red wine vinegar in a jar. Add grainy mustard, crushed peppercorns, salt and olive oil, cover and shake well.

Step 3

Take pasta in another bowl. Add cherry tomatoes, celery, carrot, radish, spring onion bulbs, pecan nuts, avocado flesh and tuna and mix.

Step 4

Add micro greens and iceberg lettuce and mix. Add the dressing and mix well.

Step 5

Serve.
