Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Thai Red Prawn Curry Recipe

  • Prawns (medium) peeled and deveined 1 cup

  • Red curry paste 1 tablespoon

  • Scraped coconut 2 tablespoons

  • Lemon grass finely chopped 1 tablespoon

  • Galangal chopped 1 tablespoon

  • Birds eye chillies 4-5

  • Turmeric powder ½ teaspoon

  • Crushed black peppercorns ½ teaspoon

  • Rice flour paste 1 tablespoon

  • Oil 2 tablespoons

  • Onion finely chopped 1 medium

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Sugar 1 teaspoon

  • Mushrooms quartered 4-5

  • Coconut milk 1 cup

  • Kaffir lime leaves 4

  • Basil leaves 5-6

  • Spring onion greens chopped 2 tablespoons

Method

Step 1

Grind coconut, lemon grass, galangal, bird’s eye chillies, turmeric powder, peppercorns and rice flour to a fine paste with sufficient water.

Step 2

Heat oil in a non-stick pan, add Thai red curry paste and sauté for 2 minutes.

Step 3

Add onion and sauté till golden brown. Add prawns and mix well.

Step 4

Add ground paste and sauté for a minute. Add salt, lemon juice and sugar and mix well.

Step 5

Add a little water and cook on low heat till the prawns are half cooked.

Step 6

Add mushrooms, reduce heat and add coconut milk. Cook for 2-3 minutes.

Step 7

Add kaffir lime leaves and basil leaves and bring the mixture to a boil.

Step 8

Serve hot garnished with spring onion greens.
