Ingredients for Sweet Potato Wedges Recipe

  • Sweet potatoes 5-6

  • Olive oil ? cup

  • Spice mix

  • Coriander seeds 2 teaspoons

  • Sea salt to taste

  • Paprika powder ½ teaspoon

  • Dried oregano 1½ teaspoons

  • Crushed black peppercorns to taste


Step 1

Preheat oven to 200ºC.

Step 2

To make spice mix, dry roast coriander seeds till fragrant. Transfer into a mortar, add sea salt and coarsely grind with a pestle. Add paprika powder, oregano and crushed peppercorns and mix. Transfer into a bowl and set aside.

Step 3

Cut sweet potatoes into wedges along with skin and place them on a baking tray. Sprinkle spice mix over the wedges and drizzle olive oil on top. Mix.

Step 4

Put the tray in preheated oven and roast for 20-30 minutes.

Step 5

Serve hot.
