Soya Nuggets with Greens

With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Soya Nuggets with Greens Recipe

  • Soya Nuggets soaked for 1 hour and squeezed 2 cups

  • Spinach shredded 1 cup

  • Fresh fenugreek leaves (methi) roasted and peeled ½ cup

  • Red pumpkin (bhopla/kaddu) peeled and cubed 1 cup

  • Oil 1 tablespoon

  • Cumin seeds ½ teaspoon

  • Turmeric powder ½ teaspoon

  • Green chillies finely chopped 2

  • Garlic minced 1 tablespoon

  • Ginger minced 1 tablespoon

  • Onion finely chopped 1 medium

  • Tomato diced 1 large

  • Salt to taste

  • Cumin powder roasted 1 teaspoon

  • Garam masala powder 1 teaspoon

  • Black pepper powder ½ teaspoon


Step 1

Pressure cook soya nuggets with spinach, fenugreek leaves and pumpkin in 1 cup water till 1whistle is given out. Lower heat and cook for 3-4 minutes.

Step 2

Heat oil in a non-stick pan. Add cumin seeds, turmeric powder and green chillies, mix and sauté for ½ minute.

Step 3

Add garlic and ginger, stir and sauté till fragrant. Add onion, stir and sauté till it turns translucent.

Step 4

Add tomato, stir and sauté on low heat till it turns soft and pulpy. Add pressure cooked nuggets mixture and mix well.

Step 5

Add salt, cumin powder, garam masala powder and pepper powder, mix well and cook on low heat for 2-3 minutes.

Step 6

Serve hot.
