Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Simple Vegetable Pulao Recipe

  • Cauliflower florets 8-10

  • French beans stringed and chopped 5-6

  • Carrots peeled and chopped 2 medium

  • Green peas 1/4 cup

  • Basmati rice soaked 1 1/2 cups

  • Ghee 1 tablespoon

  • Cumin seeds 1 tablespoon

  • Black peppercorns 4-5

  • Green cardamoms 3-4

  • Cloves 3-4

  • Bay leaves 2

  • Green chillies slit 2

  • Salt to taste


Step 1

Heat ghee in a non-stick pan. Add cumin seeds, peppercorns, green cardamoms, cloves and bay leaves, mix and sauté for 30 seconds.

Step 2

Add cauliflower, French beans, carrots and green chillies and mix well.

Step 3

Add green peas and mix well. Add rice and salt and mix lightly.

Step 4

Add 3 cups water, mix and bring to a boil.Cover and cook on low heat till rice is done.

Step 5

Serve hot garnished with a coriander sprig.
