It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Shrimp Spring Rolls Recipe

  • Shrimps shelled and deveined with tail 8

  • Spring rolls sheets 8

  • Oil for deep-frying

  • Spring onion bulb 1

  • Fresh red chilli 1

  • Ginger 1 inch

  • Sesame oil 1 teaspoon

  • Salt to taste

  • Juice of 1 lemon

  • Cornstarch 1 1/4 teaspoons

  • Egg 1


Step 1

Heat sufficient oil in a kadai.

Step 2

Finely chop spring onion bulb and place in a bowl.

Step 3

Finely chop fresh red chilli and add to the bowl. Grate ginger into the bowl.

Step 4

Add sesame oil, salt, shrimps and lemon juice and mix well. Add cornstarch and mix well.

Step 5

Break egg in another bowl and beat well.

Step 6

Place a spring roll sheet on a worktop. Put a marinated shrimp at one end and roll keeping the tail outside, sealing with the beaten egg. Make remaining shrimp spring rolls in the similar way.

Step 7

Deep-fry the shrimp spring rolls in hot oil till golden. Drain on absorbent paper.

Step 8

Serve hot.
