Ingredients for Shish Taouk With Rice Recipe

  • Boneless chicken cut into 1 inch pieces on the bone 400 grams

  • Basmati rice soaked 1/2 cups

  • Olive oil 3 tablespoons

  • Salt to taste

  • Chicken stock 3 stocks

  • Hung curd 2 tablespoons

  • Garlic chopped 1 tablespoon

  • Cayenne pepper 1/4 teaspoon

  • Lemon juice 2 teaspoons

  • Tomato puree 2 tablespoons

  • Green capsicum diced 1 medium

  • Red capsicum diced 1 medium

  • Yellow capsicum diced 1 medium

Method

Step 1

Heat 2 tbsps oil in a rice cooker. Add rice, salt and chicken stock. Stir, cover and cook till done.

Step 2

Take yogurt in bowl. Add garlic, salt, cayenne pepper and chicken pieces. Mix well.

Step 4

Add lemon juice and 1 tbsp oil. Mix well. Add tomato puree and mix well. Set aside to marinate for 4 hours.

Step 5

Thread the chicken pieces onto skewers along with green, red and yellow capsicums alternately.

Step 6

Heat oil in non stick pan. Place skewers on it, cover and cook, rotating the skewers till chicken is done evenly all around.

Step 7

Spread cooked rice on serving dish and place skewers on it. Serve immediately.
