Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Roasted Cherry Tomato and Guacamole Sandwich Recipe

  • Cherry tomatoes 10-12

  • Avocado seeded, flesh scooped out and mashed 1

  • Bread slices Rye 4

  • Oil to sprinkle

  • Crushed black peppercorns to sprinkle

  • Salt to taste

  • Fresh rosemary sprigs 1-2

  • Tomato finely chopped 1 tablespoon

  • Onion finely chopped 1 tablespoon

  • Green chillies finely chopped 1-2

  • Fresh coriander leaves chopped 1 tablespoon

  • Juice of ½ lemon

  • Feta cheese creamed for spread

  • Alfalfa as required


Step 1

Preheat oven to200º C. Line a baking tray with a silicon mat.

Step 2

Halve cherry tomatoes and spread them in the baking tray. Drizzle some oil and sprinkle some crushed peppercorns and salt on top. Put some torn rosemary sprigs.

Step 3

Place the baking tray in preheated oven and roast for 10 minutes.

Step 4

To prepare guacamole, take avocado flesh in a bowl. Add tomato, onion, green chillies, coriander leaves, lemon juice, salt and crushed peppercorns and mix well.

Step 5

Spread some feta cheese and guacamole on each bread slice. Put some roasted cherry tomatoes on top.

Step 6

Serve immediately.
