How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Rice Stuffed Omelette Recipe

  • Cooked rice 1 cup

  • Eggs 8

  • Oil 1 tablespo as required

  • Garlic cloves roughly chopped 4-6

  • Onion finely chopped 1 medium

  • Tomato puree ½ cup

  • Chicken sausages cut into small cubes 4-5

  • Tomato ketchup 2 tablespoons

  • Fresh thyme 1 teaspoon

  • Salt to taste

  • Crushed black peppercorns to taste

  • Milk 2-3 tablespoons

Method

Step 1

Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté for 10 seconds. Add onion and sauté till translucent.

Step 2

Add tomato puree, mix and cook for 1minute. Add sausages, mix and cook for 1minute. Add tomato ketchup and mix. Add rice, fresh thyme, salt, crushed peppercorns, mix and cook for 1 minute.

Step 3

Break eggs into a bowl. Add milk, crushed peppercorns and salt and whisk well.

Step 4

Heat some oil in another non-stick pan. Pour a quarter of the egg mixture, mix lightly and cook till the omelette is set. Put some rice mixture on one side of the omelette and fold the other side over it. Similarly make more omelettes.

Step 5

Halve each and serve hot.
