Ingredients for Quinoa Pulao with Mixed Vegetables Recipe

  • Quinoa soaked for 15-20 minutes 1½ clove

  • Carrot peeled, cut into diamonds and blanched 1 medium

  • baby corn cut into diamonds and blanched 6-8

  • Broccoli florets separated and blanched 1 small head

  • Ghee 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Black peppercorns 4-5

  • Cloves 3-4

  • Yogurt 3 tablespoons

  • Salt to taste

  • mixed micro greens as required

Method

Step 1

Heat 1 tablespoon ghee in a non-stick pan. Add cumin seeds, peppercorns and cloves and sauté till fragrant. Add quinoa, mix and cook for 2-3 minutes.

Step 2

Add yogurt and mix. Add salt, mix and cook on high heat for 3-4 minutes or till mixture dries.

Step 3

Add 3 cups water, mix and bring to boil. Cover and cook till quinoa is done.

Step 4

Heat remaining ghee in another non-stick pan. Add carrot, baby corn and broccoli, toss and cook for 1 minute.

Step 5

Place a medium size cookie cutter in the center of a serving platter. Put cooked quinoa into the cookie cutter and place sautéed vegetables and micro greens on top. Remove the cookie cutter carefully.

Step 6

Serve hot.
