Tajins and pastillas are true symbols of Moroccan food.  Moroccan cuisine has retained its traditionalism. In a broad sense Moroccan food is a part of Mediterranean cuisine. Various influences like Arabs, Moors can be traced in their food. The food here largely depends on seasonal and local produce. 
The people are diet conscious and give a lot of importance to the use of fresh vegetables like carrots, cabbage, eggplant, pumpkin, zucchini, onions, peppers etc. which not only add a lot of colour but also plenty of nutrients to the dishes. They also use plenty of lentils and beans whereas meat is used  in moderation.  They do use plenty of Atlantic fish and seafood. Perhaps it is a result of the country having the longest coastline among other Arab countries.

Ingredients for Quick Zatar Pizza Recipe

  • Zatar Powder (sumac, dried thyme, dried oregano and roasted ses 1/2 cup

  • Pita Breads 4

  • Extra-virgin olive oil 3-4 tablespoons

  • Salt to taste

  • Mozzarella cheese 200 grams

  • Black olives 4-5

Method

Step 1

Halve pita breads and slit one of the halved breads.

Step 2

Mix zatar powder and olive oil in a bowl. Add salt and mix well.

Step 3

Slice mozzarella cheese. Remove seeds and roughly slice olives.

Step 4

Spread zatar mixture, reserving some, on pita bread halves and also on the slit half. Place cheese slices, spread reserved zatar mixture, top some pita breads with sliced olives and let others remain plain.

Step 5

Place these pita breads in an air fryer and bake at 180° C for 8-10 minutes.

Step 6

Arrange them on a serving plate and serve immediately.
