How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Quick Chakli Recipe

  • Rice flour 1 cup

  • Refined flour (maida) ½ cup

  • Red chilli powder a pinch

  • Carom seeds (ajwain) ½ teaspoon

  • Butter softened 1 tablespoon

  • Yogurt 4 small piece

  • Salt to taste

  • Oil for deep-frying

Method

Step 1

Mix together rice flour, refined flour, chilli powder, carom seeds, butter, yogurt and salt in a bowl. Add sufficient water and knead to a soft dough.

Step 2

Put small portions of the mixture into a chakli mould and press out several chaklis onto a plastic sheet.

Step 3

Heat sufficient oil in a kadai. Deep-fry the chaklis on moderate heat till light golden brown and crisp.Drain on absorbent paper and cool.

Step 4

Serve or store in an airtight container.
