Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Prawns Xacuti Recipe

  • Prawns (medium) shelled and deveined 2 cups

  • Dried coconut ( khopra) grated ½ cup

  • Cinnamon ½ inch stick

  • Cloves 4

  • Black peppercorns 4

  • Green cardamoms 2

  • Poppy seeds (khuskhus/posto) 1 tablespoon

  • Salt to taste

  • Turmeric powder ¼ teaspoon

  • Oil 2-3 tablespoons

  • Onions finely chopped 2 medium

  • Ginger-garlic paste 1 tablespoon

  • Nutmeg powder ½ teaspoon

  • Vinegar 2 tablespoons

  • Coriander-cumin powder 2 teaspoons

  • Fresh coriander leaves 2 tablespoons + for garnishing

Method

Step 1

Heat 1 tablespoon oil in a non-stick pan, add cinnamon, cloves, peppercorns, cardamoms and poppy seeds and sauté for a minute. Add coconut and sauté further for a minute. Cool and grind, with sufficient water, to a coarse paste.

Step 2

Put prawns in a bowl, add salt and turmeric powder and mix well.

Step 3

Heat remaining oil in another non-stick pan, add onions and sauté till translucent. Add ginger-garlic paste and sauté further for a minute. Add ground paste and sauté for 2-3 minutes.

Step 4

Add prawns and cook for 2-3 minutes. Add coriander-cumin powder and mix well.

Step 5

Add ½ cup water and mix well. Cook for 5-7 minutes.

Step 6

Add nutmeg and vinegar and mix well. Add coriander leaves and mix well.

Step 7

Serve hot garnished with coriander leaves.
