Grease a round 2½ inches baking tin with some butter.
Take yeast in a bowl. Add a pinch castor sugar and some water, mix and heat in the microwave for 5-10 seconds. Remove from heat and set aside.
Take flour in a bowl. Add 1 tablespoon castor sugar, salt and activated yeast, mix. Add water as required and knead into a soft dough.
Take onion, capsicum, sausages, pizza sauce and Italian seasoning in a bowl and mix well.
Divide the dough into equal portions and shape them into small balls. Make a dent in each ball, stuff with sausage mixture, seal and shape again into balls. Place the balls in the greased tin, sprinkle cheese on top, cover with a cling film and set aside to prove for 15-20 minutes.
Preheat oven at 180º C.
Remove cling film, place the tin in the preheated oven and bake for 10-15 minutes.
