How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Pineapple Pulao Recipe

  • Basmati rice soaked 1 1/2 cups

  • Tinned pineapple 3 slices

  • Castor sugar (caster sugar) 6 tablespoons

  • Cinnamon 2 inch sticks

  • Cashewnuts chopped 2-3 tablespoons

  • Raisins soaked and drained 2 tablespoons

  • Vanilla essence 1/2 teaspoon


Step 1

Heat a deep non stick pan, add castor sugar and cook stirring continuously till it caramelizes.

Step 2

Cut pineapple slices into medium cubes and add to the pan and mix. Add cinnamon and mix and saute for 3-4 minutes.

Step 3

Add cashewnuts and mix. Add raisins and mix. Drain and add rice and mix well. Add 3 cups water and mix. Add vanilla essence and mix.

Step 4

Cover and cook on high heat for 8-10 minutes. Check if the rice is done. If it is not completely cooked, sprinkle a little water and cook till it is completely done. Serve hot.
