Ingredients for Papaya Barfi Recipe

  • Papaya ripe, puree 1 cup

  • Coarse gram flour (besan) ½ cup

  • Ghee ¾ cup + for greasing

  • Milk ½ cup

  • Saffron (kesar) a pinch

  • Sugar 1 cup

  • Green cardamom powder ½ teaspoon

  • Pistachios slivered 10-12

Method

Step 1

Grease a barfi tray with some ghee.

Step 2

Dry roast gram flour in a non-stick pan on low heat till golden brown. Transfer into a bowl and set aside.

Step 3

Put papaya puree in the same pan and cook for 5-10 minutes.

Step 4

Heat ghee in another non-stick pan. Add milk, saffron and sugar, mix and bring to a boil.

Step 5

Add the roasted gram flour, papaya puree and cardamom powder, mix well and cook till the mixture thickens.

Step 6

Pour the mixture into the greased tray, spread evenly, sprinkle pistachios on top and set aside to set for 1 hour.

Step 7

Cut into pieces and serve.
