Ingredients for Oatmeal with Eggs Recipe

  • Rolled Oats 2 cups

  • Eggs 4

  • Olive oil 1 teaspoon

  • Butter 1 teaspoon

  • Onions Chopped 1/2 cups

  • Buttermilk 2 cups

  • Salt to taste

  • Crushed black peppercorns to taste

  • Green capsicum 1/2

  • Tomatoes Chopped 1/2 cup

  • Processed cheese 50 grams

  • Fresh parsley A few sprigs


Step 1

Heat olive oil and butter in a non-stick pan. Add onions and saute for 1 minute. Add oats and mix. Add buttermilk and mix and cook.

Step 2

Add salt and crushed peppercorns and mix.

Step 3

Chop green capsicum finely and put into a bowl. Add chopped tomatoes and mix well.

Step 4

Put oats into 4 ramekin moulds. Break an egg into each mould. Sprinkle a little salt and crushed peppercorns.

Step 5

Place tomato-capsicum on other side of the yolks. Grate a little cheese and put over the vegetables.

Step 6

Cook in the microwave for ½ minute. Check if it is done. If the egg is not done, cook for ½ minute more.

Step 7

Serve hot garnished with small sprigs of parsley.
