Ingredients for Musk Melon Granita with Pumpkin Seeds Brittle Recipe

  • Muskmelon peeled, seeded and cubed 800 grams

  • Juice of ½ lemon

  • Castor sugar (caster sugar) ¼ cup

  • Pumpkin seed brittle

  • Pumpkin seeds ½ cup

  • Castor sugar (caster sugar) 1 cup

  • Sea salt 1 teaspoon

Method

Step 1

Spoon the musk melon cubes into a blender jar and blitz to a puree. Add lemon juice and castor sugar and blend again.

Step 2

Transfer the mixture into a silicon container and freeze, stirring every hour, until fully frozen.

Step 3

To make pumpkin seed brittle, heat castor sugar in a non-stick pan till it melts. Simmer for 4-5 minutes or till turns golden brown. Pour on a silicon sheet.

Step 4

Sprinkle pumpkin seeds and sea salt and set aside to cool. Once set, break into pieces.

Step 5

Place granite scoops into 4 individual Martini glasses. Sprinkle brittle pieces and serve immediately.
