Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom Vindaloo Recipe

  • Mushrooms cut into quarters 8-10

  • Dried red chillies 4-5 + for garnishing

  • Coriander seeds 1 teaspoon

  • Cumin seeds 1 teaspoon

  • Black peppercorns 4-5

  • Green cardamom 1

  • Cloves 4-5

  • Vinegar 2 tablespoons

  • Oil 1 tablespoon

  • Onion chopped 1 medium

  • Ginger-garlic paste 1 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Potato peeled, cut into cubes and deep-fried 1 medium

Method

Step 1

Grind together dried red chillies, coriander seeds, cumin seeds, peppercorns, cardamom, cloves and vinegar with some water to a fine paste.

Step 2

Heat oil in a non-stick pan. Add onion, mix and sauté till golden. Add ginger-garlic paste, mix and cook for a minute.

Step 3

Add turmeric powder and mix well. Add the prepared paste, mix and cook for a minute.

Step 4

Add mushrooms and mix well. Add ½ cup water, mix, cover and cook on low heat for 5 minutes.Add salt, mix and cook on high heat for 30 seconds.

Step 5

Add fried potato, mix and sauté for 2 minutes.

Step 6

Serve hot garnished with dried red chilli and a coriander sprig.
