The main difference between Italian and Indo Italian dishes is that the dishes which require stuffing, Indian vegetables and masalas replace the authentic Italian ones. 
Authentic Italian foods use the typical Italian herbs to flavour but very little chillies. And since we Indians like our food to be spicier, plenty of chilli flakes do the needful.

Ingredients for Mozzarella Kulcha Recipe

  • Refined flour (maida) 3 cups + for dusting

  • Baking powder 1 teaspoon

  • Castor sugar (caster sugar) 1 teaspoon

  • Butter 5 tablespoons

  • Salt to taste

  • Milk 1 cup

  • Oil for greasing

  • Melted butter for brushi for basting

  • Stuffing

  • Mozzarella cheese grated 1 cup

  • Garlic cloves finely chopped 5-6

  • Salt to taste

  • Fresh coriander leaves chopped ¼ cup

Method

Step 1

Take flour in a bowl. Add baking powder, castor sugar, butter and salt and mix. Add milk and knead into a soft dough. Cover with damp muslin cloth and set aside for 10-15 minutes.

Step 2

To prepare stuffing, take cheese in another bowl. Add garlic, salt and coriander leaves and mix well.

Step 3

Preheat oven to 200° C.

Step 4

Grease a baking tray with some oil.

Step 5

Dust the dough with some flour, divide into equal portions and shape into balls.

Step 6

Divide the stuffing into equal number of portions as the dough.

Step 7

Dust the worktop with some flour and roll out each ball into small thick disc. Place a portion of the stuffing in the center of each disc, bring the edges together, press lightly to seal and shape into balls.

Step 8

Dust the worktop with some flour, place each ball, lightly press to flatten and roll out into small thick discs.

Step 9

Place the discs on the greased tray and lightly brush with some melted butter.

Step 10

Place the tray in the preheated oven and bake for 10-15 minutes.

Step 11

Halve and serve hot.
