Ingredients for Moong Dosa with Sprout Potato Stuffing Recipe

  • Whole green grams (sabut moong) soaked overnight and drained 2 cups

  • Moong sprouts ¼ cup

  • Moth sprouts ¼ cup

  • Potatoes boiled, peeled and mashed 2 medium

  • Oil 1 tablespo for garnishing

  • Mustard seeds 1 teaspoon

  • Black gram split (urad dal dhuli) 1 teaspoon

  • Curry leaves 4-6

  • Green chillies finely chopped 4

  • Onion sliced 1 medium

  • Salt to taste

  • Sugar a pinch

  • Turmeric powder ¼ teaspoon

  • Ginger chopped ½ inch

  • Cumin seeds ½ teaspoon

Method

Step 1

Heat 1 tablespoon oil in a non-stick pan. Add mustard seeds and split black gram and let mustard seeds splutter. Add curry leaves and ½ the green chillies and sauté for 10 seconds.

Step 2

Add onion, salt and sugar and sauté till onion turns golden. Add turmeric powder, moong sprouts and moth sprouts and mix. Add potatoes, mix and cook for 1-2 minutes.

Step 3

Add some water, mix and cook for 1-2 minutes.

Step 4

To prepare moong batter, grind together soaked green gram, ginger, remaining green chillies, salt and cumin seeds along with some water to a thick and smooth batter. Transfer into a bowl.

Step 5

Heat a non-stick tawa. Pour a ladleful of batter and spread with the back of the ladle to a large thin disc. Drizzle some oil on the edges of the disc and cook till the underside is golden.Put some sprout and potato mixture in the center and fold.

Step 6

Make more dosa in the same way.

Step 7

Serve hot.
