Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Malabari Coconut Rice Recipe

  • Coconut milk 1 cup

  • Short grain rice soaked and drained 1½ cups

  • Shallots 15-18

  • Ghee 1 tablespoon + to sprinkle

  • Cloves 5-6

  • Cinnamon 1 inch

  • Green cardamoms 2-3

  • Fennel seeds (saunf) ½ teaspoon

  • Curry leaves 12-15

  • Green chillies chopped 2

  • Ginger-garlic paste 1 teaspoon

  • Salt to taste

  • Turmeric powder ¼ teaspoon

  • Coriander powder 1 teaspoon

  • Garam masala powder ½ teaspoon


Step 1

Slice shallots.

Step 2

Heat ghee in anon-stick pan. Add cloves, cinnamon, cardamoms and fennel seeds and sauté.

Step 3

Add curry leaves, green chillies and sliced shallots. Mix and sauté till shallots turn translucent. Add ginger-garlic paste, mix and sauté for 10-15 seconds.

Step 4

Add rice and mix well. Add half the coconut milk, ½ cup water, salt, turmeric powder, coriander powder and garam masala powder. Mix well, cover and cook till the rice is fully done.

Step 5

Add remaining coconut milk, mix well, cover and cook for 2-3 minutes.

Step 6

Drizzle ghee on top and serve hot.
