Ingredients for Lemongrass Chicken Skewers Recipe

  • Lemon grass roots chopped 1 inch piece

  • Boneless chicken breasts cut into 12 strips 2

  • Ginger 1 inch piece

  • Sea salt to taste

  • Crushed black peppercorns 1/2 teaspoon

  • Crushed red chillies 1/2 teaspoon

  • Lemon 1

  • Fish sauce 1 teaspoon

  • Oyster sauce 1 tablespoon

  • Honey 1 tablespoon

  • Olive oil 2 tablespoons

Method

Step 1

Slice lemongrass root, ginger and put them in a mortar. Add sea salt, peppercorns, crushed red chillies and crush all together with a pestle. Squeeze the juice of lemon into the mixture, add fish sauce, oyster sauce and mix well. Place the chicken strips in a bowl, pour the above mixture over it and mix well.

Step 2

Let it marinate for 1 hour, preferably in a refrigerator. Add honey and mix. String the chicken strips onto skewers. Heat olive oil in a non stick pan on medium heat, place the skewers on it and cook for 2-3 minutes till golden, rotating the skewers a few times for even cooking. Serve hot.
