How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Lemon Rice Recipe

  • Rice boiled 1 1/2 cups

  • Lemon Juice 4 tablespoons

  • Mustard seeds 1 teaspoon

  • Dried red chilli broken 1

  • Split Bengal gram (chana dal) soaked 2 tablespoons

  • Green chillies slit 2

  • Cashewnuts broken 6-8

  • Curry leaves 8-10

  • Turmeric powder 1/4 teaspoon

  • Asafoetida a pinch

  • Salt to taste

  • Oil 8 tablespoons


Step 1

Heat the oil in a non stick pan. Add the mustard seeds and when they splutter, add the red chilli, split Bengal gram and green chillies and sauté for a minute. Add the cashewnuts and curry leaves and sauté for a minute.

Step 2

Add the turmeric powder and asafoetida and mix well. Add the boiled rice and mix well. Add salt and quarter cup of water. Stir well, cover and cook for two minutes on medium heat. Sprinkle lemon juice and mix well. Serve hot.
