Ingredients for Kastoori Kabab Recipe

  • Chicken Breast 2

  • Gram Flour 1 tablespoon

  • Garlic paste 1 tablespoon

  • Juice of 1 lemon

  • White pepper powder 1/2 teaspoon

  • Salt to taste

  • Butter 1 tablespoon

  • Oil 2 tablespo

  • Caraway seeds (shahi jeera) 1/2 teaspoon

  • Gram flour (besan) 3 tablespoons

  • Bread crumbs 2 tablespoons

  • Green cardamom powder a pinch

  • Saffron (kesar) 1/2 grams

  • Fresh cream 4 tablespoons

  • Green chillies 2

  • Fresh coriander leaves a few sprigs

  • Eggs 2

  • Chaat masala to sprinkl


Step 1

Slice chicken breasts into thin diagonal pieces and put them into a bowl.

Step 2

Add ginger paste, garlic paste, lemon juice, white pepper powder and salt and mix well.

Step 3

Keep aside for 10-15 minutes to marinate. Heat butter and 1 tsp oil in a non stick kadai.

Step 4

Add shahi jeera and sauté till fragrant.

Step 5

Add gram flour and sauté on low heat for 2-3 minutes. Add marinated chicken, breadcrumbs, green cardamom powder and saffron and mix.

Step 6

Transfer into a bowl. Add fresh cream and mix. Finely chop green chillies and coriander leaves, add to the chicken and mix.

Step 7

Keep aside for 15-20 minutes. Break eggs and separate whites and yolks.

Step 8

Whisk the egg whites till light and fluffy. String the chicken pieces onto satay sticks and spread the remaining marinade over them.

Step 9

Heat the remaining oil in a non stick pan. Grill the chicken till evenly golden.

Step 10

Spread the egg whites over the chicken. Cover and cook for 2-4 minutes.

Step 11

Transfer the kastoori kababs onto a plate, sprinkle some chaat masala and serve hot.
