Ingredients for Goan Style Spinach Recipe

  • Spinach cleaned 1 medium bunch

  • Tomatoes finely chopped 2 medium

  • Oil 2 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Onion finely chopped 1 medium

  • Green chillies chopped 2

  • Salt to taste

  • Cooked split pigeon peas (toor dal) 1 tablespoon

  • Dal stock 1/2 cup

  • Scraped fresh coconut 3 tablespoons

Method

Step 1

Roughly chop spinach leaves.

Step 2

Heat oil in a non-stick pan. Add mustard seeds and let them splutter.

Step 3

Add onion and saute well. Add tomatoes, mix and saute for 2 minutes.

Step 4

Add chopped spinach, green chillies and salt, mix well and cook.

Step 5

Add pigeon peas, dal stock, mix well, cover and cook for 3-4 minutes.

Step 6

Add coconut and mix well.

Step 7

Serve hot.
