Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Flavours of Hummus Recipe

  • Fresh parsley sprigs for garnishing

  • Fresh red chillies for garnishing

  • Fresh mint sprigs for garnishing

  • Cherry tomatoes halves for garnishing

  • Amaranth micro greens for garnishing

  • Red radish slices for garnishing

  • Lavash to serve

  • Plain hummus

  • Chickpeas (kabuli chana) soaked overnight, pressure cooked, strained and st 2 cups

  • Tahini 2-3 tablespoons

  • Garlic cloves 12-15

  • Salt to taste

  • Extra virgin olive oil ¾ cup

  • Chutney hummus

  • Mint chutney with coriander 1 teaspoon

  • Tamarind pulp 2 teaspoons

  • Tomato hummus

  • Dried tomato powder 1 teaspoon

  • sun dried tomatoes 2

  • Lemon juice 1 teaspoon

  • Avocado hummus

  • Avocado pulp 1

  • Lemon juice 2-3 teaspoons

  • Paprika 1 teaspoon


Step 1

To prepare hummus, grind together chickpeas, tahini, garlic cloves, salt, some chilled strained chickpea water and ½ cup olive oil to a paste. Add remaining olive oil and grind to a smooth paste.

Step 2

Divide the hummus into 4 equal portions and put in 4 different bowls.

Step 3

To prepare chutney hummus, add tamarind pulp and mint-coriander chutney to 1st portion and mix well.

Step 4

To prepare tomato hummus, add dried tomato powder to 2nd portion. Slice and add sun dried tomatoes along with lemon juice and mix well.

Step 5

To prepare avocado hummus, deseed, scoop out avocado pulp, add to 3rd portion and mix. Add lemon juice and mix. Add paprika and mix well.

Step 6

Put the plain hummus, chutney hummus, tomato hummus and avocado hummus in 4 different serving bowls and garnish each with a parsley sprig, slit red chilli, a mint sprig, halved cherry tomato, amaranth micro greens and red radish slice.

Step 7

Serve with lavash.
