Ingredients for Fish with Roasted Pepper and Coriander Dressing Recipe

  • Fish Fillets boneless, cut into 3 inch pieces 600 grams

  • Red capsicum roasted, peeled and diced 1 large

  • Fresh coriander leaves chopped ¼ cup

  • Salt to taste

  • Crushed black peppercorns to taste

  • Lemon juice 2 tablespoons

  • Olive oil 3 tablespoons

  • Garlic cloves chopped 6-8

  • Fresh parsley chopped 2 tablespoons

  • Red chilli flakes 1 teaspoon

Method

Step 1

Place fish pieces on a plate. Sprinkle salt, crushed peppercorns and 1 tablespoon lemon juice and spread evenly on the pieces. Set aside for 10-15 minutes.

Step 2

To make the dressing, heat 2 tablespoons olive oil in a non-stick pan. Add garlic and sauté for 2 minutes.

Step 3

Add capsicum, coriander leaves, parsley, chilli flakes, salt and crushed peppercorns, mix well and sauté for 1 minute. Add remaining lemon juice and remove from heat. Set aside.

Step 4

Heat the remaining oil in a non-stick grill pan. Place the marinated fish pieces on it and cook for 2 minutes on each side.

Step 5

Serve hot with the prepared dressing.
