Ingredients for Fiery Pepper Chicken Recipe

  • Boneless chicken breasts 400 grams

  • Crushed black peppercorns to taste

  • Sesame oil (til oil) 2 tablespoons

  • Salt to taste

  • Dried red chillies diagonally sliced 2-3

  • Garlic chopped 1 tablespoon

  • Ginger chopped ½ tablespoon

  • Spring onion bulbs finely chopped 2-3

  • Light soy sauce 1 tablespoon

  • Dark soy sauce ½ tablespoon

  • Sugar 1 teaspoon

  • Vinegar

  • Cornflour/ corn starch

  • Spring onion greens chopped 2 tablespoon

Method

Step 1

Heat 1 tablespoon sesame oil in a non-stick pan. Add chicken, salt and crushed peppercorns, mix and cook till chicken is half done. Transfer into a plate.

Step 2

Heat remaining sesame oil in the same non-stick pan. Add dried red chillies, garlic and ginger and sauté for a minute.

Step 3

Add seared chicken and toss. Add spring onion bulbs and sauté for a minute.

Step 4

Add light soy sauce, dark soy sauce, crushed peppercorns, sugar and vinegar, mix well and toss.

Step 5

Mix cornstarch in some water to make smooth slurry, add it to the pan and mix well. Add spring onion greens and mix well.

Step 6

Serve hot.
