Ingredients for Eggwhite Bolognaise Recipe

  • Fettuccine boiled 1 cup

  • Eggs boiled and peeled 2

  • Oil 1 tablespoon

  • Garlic chopped 1 tablespoon

  • Onions chopped 2 medium

  • Tomatoes blanched and chopped 2 medium

  • Tomato puree 1/2 cup

  • Salt to taste

  • Black peppercorns to taste

  • Red chillies crushed 1/2 teaspoon

  • Oregano 1 teaspoon

  • Parmesan cheese for sprinkling


Step 1

Heat 1 tbsp oil in a non stick pan, add garlic and sauté for 2 minutes. Add onion and sauté till soft.

Step 2

Halve boiled eggs, discard yolks and chop whites roughly.

Step 3

Add tomatoes, tomato puree and salt to the pan and mix well. Add crushed peppercorns, crushed red chillies, oregano and 4-5 tbsps water. Mix and cook for 5 minutes.

Add fettucine and tomato sauce. Mix well and toss for a minute.

Step 6

Serve hot sprinkled with parmesan cheese shavings.
