Ingredients for Cucumber and Arugula Pinwheel Sandwiches Recipe

  • Cucumber peeled and sliced vertically 2

  • White bread slices 7-8

  • white bread slices 8

  • mayonnaise 4 tablespoons

  • Crushed black peppercorns to taste

  • Salt to taste

  • chopped capers 2 tablespoons

  • chopped dill leaves 1 tablespoon

  • Juice of ½ lemon

Method

Step 1

Discard edges of bread slices and soak them in water for some time. Squeeze the excess water.

Step 2

Spread a large cling film on the worktop and place the bread slices connecting the edges together so that it becomes a rectangle mat. Press the sides so that the slices stick to each other at the edges.

Step 3

Spread mayonnaise all over and sprinkle crushed peppercorns, salt, capers and chopped dill on top. Place cucumber slices, arugula leaves and again sprinkle salt, crushed peppercorns and lemon juice.

Step 4

Roll the arrangement tightly into a cylinder and seal the ends by tieing a knot at both ends. Refrigerate for 20-25 minutes.

Step 5

Slice the sandwich into medium pieces and serve immediately with tomato ketchup.
