How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Creamy Red Rice Risotto Recipe

  • Red rice 1½ cups

  • Butter 4 tablespoons

  • Onion sliced 1 medium

  • Garlic cloves finely chopped 2-3

  • Mixed herbs fresh, chopped 1 tablespoon

  • Vegetable stock 6 cups

  • Salt to taste

  • Black peppercorns crushed 10-12

  • Frozen green peas ½ cup

  • Cream ½ cup

  • Mascarpone cheese 1 tablespoon

  • Parmesan cheese shavings for garnishing

  • Fresh parsley sprigs for garnishing

Method

Step 1

Heat butter in a non-stick pan. Add onion, garlic and mixed herbs, mix well and sauté till onion turns golden brown.

Step 2

Add rice and sauté for 2-3 minutes. Add 1 cup vegetable stock, salt and crushed peppercorns and simmer till the stock is absorbed.

Step 3

Repeat the same with the remaining stock, adding 1 cup at a time. Add peas, mix and cook for 1 minute.

Step 4

Add mascarpone cheese and mix gently.

Step 5

Sprinkle parmesan cheese shavings, garnish with parsley sprigs and serve hot.
