Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Pudding Recipe

  • Sweet corn 1 tin

  • Spring onions 3-4

  • Butter 2 tablespoons

  • Olive oil 1 tablespoon

  • Refined flour (maida) 2 teaspoons

  • Milk 1 cup

  • Salt to taste

  • Eggs 3

  • Crushed black peppercorns to taste


Step 1

Preheat the oven to 180°C. Chop spring onion greens and bulbs. Heat butter and olive oil in a non stick pan. Add refined flour and saute till raw smells disappear but flour does not get coloured.

Step 2

Add milk, little by little, and stir well to prevent lumps. Add spring onion greens and bulbs and mix well. Cook till the sauce thickens. Transfer the sauce into a bowl. Drain and add sweet corn and mix well. Add salt and mix.

Step 3

Break eggs into the bowl and mix well.Pour the batter into a baking dish. Sprinkle some sweet corn on top and bake in the preheated oven for ½ hour. Cool, slice and serve.
