Ingredients for Chocolate Jumbles with Caramel Recipe

  • Cocoa powder ¼ cup

  • Refined flour (maida) 2¾ cups

  • brown sugar/jaggery ½ cup

  • Butter 60 grams

  • Golden syrup 1 cup

  • Egg 1

  • Soda bicarbonate ½ teaspoon

  • Cinnamon powder 1 teaspoon

  • Nutmeg powder 1 teaspoon

  • Dried ginger powder (soonth) 2 teaspoons


Step 1

Heat together butter, brown sugar and ¾ cup golden syrup in a non-stick pan. Cook, stirring, for 4 minutes or till smooth. Transfer into a bowl and set aside for 10 minutes.

Step 2

Add egg. Sift together flour, cocoa powder, soda bicarbonate, cinnamon powder, nutmeg powder and ginger powder into the bowl. Mix till well combined into a dough.

Step 3

Transfer the dough on a worktop and knead till sticky. Wrap in a cling film and refrigerate for 30 minutes.

Step 4

Preheat oven to 180° C. Line a baking tray with butter paper.

Step 5

Divide the dough into 6 x 2 cm thick logs and place them on the lined tray. Place the tray in the preheated oven and bake for 15 minutes.

Step 6

Drizzle the remaining golden syrup over the logs and serve.
