Chicken and Prawn Rice with Peppers

Ingredients for Chicken and Prawn Rice with Peppers Recipe

  • Boneless chicken cut into 1 inch pieces 250 grams

  • Prawns (kolambi/jhinga) shelled, deveined 8-10 medium

  • Rice soaked for 30 minutes, drained 1½ cups

  • Yellow capsicum diced 1 medium

  • Green capsicum diced 1 medium

  • Red capsicum diced 1 medium

  • Butter 1 tablespoon

  • Oil ½ tablespoon

  • Garlic chopped 1 tablespoon

  • Onion finely chopped 1 medium

  • Tomato blanched, peeled, finely chopped 1 medium

  • Salt to taste

  • Paprika 1 teaspoon

  • Broccoli 6-8 florets

  • Chicken stock 3-4 cups


Step 1

Heat butter and oil in a deep non-stick pan. Add garlic and sauté for 30 seconds.

Step 2

Add onion and sauté till translucent. Add tomato and sauté for 1 minute. Add salt and paprika and mix well.

Step 3

Add chicken, mix and cook for 1 minute. Add rice and mix well. Add yellow capsicum, green capsicum, red capsicum, broccoli and chicken stock, mix and bring to a boil.

Step 4

Add prawns, mix and cover and cook till rice is done.

Step 5

Serve hot.
