Ingredients for Chicken Fajita Recipe

  • Boneless chicken cut into cubes 300 grams

  • Tortillas 4

  • Salt to taste

  • Paprika powder 1 teaspoon

  • Fajita spice mix 1 tablespoon

  • Butter 1 tablespoon

  • Garlic crushed 1 tablespoon

  • Fresh coriander leaves chopped 2 tablespoons

  • Vinegar 1 teaspoon

  • Jalapenos chopped 1 tablespoon

  • Lettuce leaves a few

  • Tomato chopped 1

  • Spring onion greens chopped 2 stalks

  • Onions cut into roundels and caramelized 2 medium

  • Green capsicum cut into roundels and caramelized 1 medium

  • Processed cheese grated 2 tablespoons

  • Sour cream as required

  • Guacamole as required

Method

Step 1

Put chicken with salt, paprika powder and fajita spice mix into a bowl and mix well. Set aside to marinate.

Step 2

Heat butter in a non-stick pan. Add garlic and sauté till well browned.

Step 3

Add marinated chicken and mix. Add very little water, mix well, cover and cook on low heat for 5 minutes.

Step 4

Add coriander leaves, vinegar and jalapenos. Mix well and remove from heat.

Step 5

Heat a non-stick tawa. Place tortillas on it and heat from both sides.

Step 6

Place each heated tortilla on a worktop. Place a spoonful of chicken mixture in the centre of each. Top with torn lettuce leaves, tomato, spring onion greens, caramelized onions, caramelized capsicum and grated cheese on top. Bring the edges together to make a wrap and secure with a toothpick.

Step 7

Serve immediately with sour cream and guacamole.
