While nothing can beat the joy of cooking fresh pasta at home, store bought variety works well for the busy bees. Remember thicker pasta shapes go well with more consistent, heavier sauces, while chunkier sauces are suited for pasta with ridges or holes. As for noodles toss them up you’re your favourite oriental sauce and have a delicious meal ready in a jiffy. Left over mains of pasta and noodles make great ingredients for salads, soups, bakes and croquettes the next day!

Ingredients for Char Kuey Teow Recipe

  • Flate Rice Noodles 250 grams

  • Shrimps 2

  • Shrimps shelled and deveined 15-18

  • Oil 1 tablespoon

  • Spring onions with greens 2-3

  • Shrimp paste 2 teaspoons

  • Red chilli paste 1 tablespoon

  • Garlic finely chopped 1 tablespoon

  • Dark soy sauce 2 teaspoons

  • Coconut sugar 1 tablespoon

  • Salt to taste

  • Egg 1

  • Bean sprouts 2 tablespoons

  • Lemon juice 1 teaspoon

  • Spring onion flower for garnishing

Method

Step 1

Pour 3 cups of hot water in a bowl and soak rice noodles in it till soft. Drain thoroughly and spread on a plate to cool.

Step 2

Heat oil in a non-stick pan.

Step 3

Slice spring onion bulbs with greens

Step 4

Add shrimp paste and red chilli paste to the pan and mix well. Add the spring onion bulbs and garlic and mix well.

Step 5

Slice chicken sausages and add and mix. Cook for 5-7 minutes.

Step 6

Add shrimps and mix well. Add dark soy sauce and coconut sugar and mix well. Add softened noodles and salt and mix well.

Step 7

Make a well in the centre of the mixture, break egg and put into the well, cover with the noodles and cook till the egg is done. Add bean sprouts and spring onion greens and mix well. Add lemon juice and mix well.

Step 8

Transfer onto a serving plate, garnish with spring onion flower and serve hot.
