If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. Ingredients for Carrot And Mushroom Medley Recipe

  • Carrots cut into roundels 2

  • Button mushrooms chopped 6-8

  • Oil 3 tablespoons

  • Onions chopped 2 medium

  • Ginger chopped 1 inch piece

  • Garlic chopped 6-8 cloves

  • Salt to taste

  • Green chillies chopped 2

  • Lemon juice 2 teaspoons

  • Paneer (cottage cheese) 100 grams

  • Jalapeno chopped 2


Step 1

Heat one and a half tablespoons oil in a pan, add onions, ginger and garlic and sauté till onions turn transluscent. Add mushrooms and salt and sauté for two to three minutes. Add green chillies and mix. Add lemon juice, mix and set aside.

Step 2

Heat the remaining oil in another pan. Add carrot roundels and sauté. Add salt and cook till carrots are soft. Cut paneer into triangles.

Step 3

Make a layer of the carrot roundels on a plate. Over each carrot roundel spread a layer of the mushroom mixture and top it with a paneer triangle.

Step 4

Top them up with green chillies or jalapenos and serve immediately.
