The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Burrito Bowl Recipe

  • Red kidney beans (rajma) boiled ½ cup

  • Cooked rice 2 cups

  • Sour cream 2 tablespoons

  • Chipotle sauce 1 teaspoon

  • Garlic chopped 1 teaspoon

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Iceberg lettuce leaves 6-8

  • Corn kernels boiled ½ cup

  • Tomato chopped 1 medium

  • Salsa ¼ cup

  • Guacamole ¼ cup

  • Fresh coriander leaves chopped 4 tablespoons


Step 1

Put sour cream, chipotle paste, garlic, salt and lemon juice in a bowl and mix.

Step 2

Divide the rice equally into four medium bowls. Place few torn lettuce leaves and put some corn kernels, kidney beans and tomato on top.

Step 3

Sprinkle some salt on top and put some salsa, guacamole and coriander leaves. Drizzle some sour cream mixture on top.

Step 4

Serve immediately.
