Ingredients for Burnt Garlic Squids Recipe

  • Squids cut into rings 4-5

  • Garlic chopped 2 tablespoons

  • Salt to taste

  • Crushed black peppercorns to taste

  • Vinegar 2 teaspoons

  • Fresh red chillies finely chopped 1-2

  • Light soy sauce 2 tablespoons

  • Oil 1 tablespoon + to deep fry

  • Egg 1

  • Cornflour/ corn starch 3 tablespoons

  • Spring onion bulbs finely chopped 3-4

  • Spring onion greens finely chopped 1 stalk

  • Garlic cloves sliced and fried 3-4


Step 1

Take squids in a bowl, add salt, crushed peppercorns, 1 teaspoon vinegar, red chillies and 1 tablespoon soy sauce in a bowl and mix well. Set aside for 15 minutes.

Step 2

Heat sufficient oil in a pan.

Step 3

Break egg in a bowl and whisk well. Add ½ of it to the squid mixture and mix. Add cornflour and mix well.

Step 4

Deep-fry the squid rings in hot oil till golden and crisp. Drain on absorbent paper.

Step 5

Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic and sauté till golden. Add spring onion bulbs and sauté for a minute.

Step 6

Add fried squids and mix. Add remaining soy sauce, crushed peppercorns, coriander leaves and spring onion greens and mix. Add remaining vinegar and mix well.

Step 7

Serve hot garnished with fried sliced garlic.
