How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Brown Rice Phirni Recipe

  • Brown rice Soaked in water for 3-4 hours 3 tablespoons

  • Skimmed milk 5 cups

  • Green cardamom powder 1/4 teaspoon

  • Walnuts chopped 3/4 cup + for garnishing

  • Jaggery (gur) grated 4 tablespoons


Step 1

Heat milk in deep non stick pan. Drain and grind brown with 2-3 tbsps water and grind coarsely.

Step 2

Add the ground rice to the milk and cook, stirring, till thick. Add green cardamom powder and mix well. Remove from heat and add walnuts. Mix well. Add jaggery and mix well.

Step 3

Pour into individual kasoras (earthenware bowls), garnish with some chopped walnuts and place in the refrigerator to set.

Step 4

Serve chilled.
