Ingredients for Apricot Rice With Nuts Recipe

  • Apricot 1/3 cup

  • Basmati Rice soaked 1 1/2 cups

  • Golden apricots soaked 10-12

  • Raisins 2 tablespoons

  • Pistachios chopped 2 tablespoons

  • Almonds chopped 1 tablespoon

  • Butter 3 tablespoons

  • Salt to taste

  • Green cardamom powder 1/4 teaspoon

  • Black pepper powder 1/4 teaspoon

  • Crushed red chillies a pinch

  • Milk 1/2 cup


Step 1

Heat 2 tbsps butter in a non stick pan. Chop golden apricots roughly.Add raisins, pistachios and almonds in the pan and mix well. Add chopped apricots and drained rice and mix well. Add salt, cardamom powder and pepper powder and mix well.

Step 2

Add 2½ cups of water, cover and cook on low heat for 3-4 minutes.Heat remaining butter in another non stick pan, add canned apricots and salt and saute for 2 minutes.

Step 3

Add crushed red chillies and mix again. Cook for 2-3 minutes and switch off heat.Add milk to the rice, cover and cook on medium heat till done. Switch off heat and let it stand, covered, for 5 minutes.

Step 4

Place rice on serving dish and put cooked canned apricot mixture on top. Serve immediately.
