Try your hand at these dishes, which like revenge are best served cold!

Cold Cucumber Soup Made with buttermilk and cucumber, with just the right amount of tang and spice - this is a perfect soup with the perfect ingredients to beat the summer heat. Serve these or cucumber mint soup shots as a welcome drink for summer parties or simply as a light lunch, a definite hit.

Green tea Coconut cooler There are an array of beverages that you can pick from to stay cool even in the scorching heat. Our favourite is a coconut cooler – a sweet blend of refreshing coconut water, green tea and coconut flesh. A drink that will energize you instantly!

Vietnamese Summer Rolls Transparent delicate rice paper rolls enclosing pickled vegetables, glass noodles and fresh basil, drizzled with a sweet chilli sauce. Once you have all the components ready this is really easy to whip up and great on the go food! Use a crunchy leaf of iceberg lettuce to roll up your veggies in, if you can’t get your hands on rice paper rolls.

Gazpacho A gazpacho is a classic cold Spanish soup that is made with tomatoes as a base. You can also add some roasted red bell peppers to bring more colour and flavour to this chilled soup. Another version of this cool summer soup is ajo blanco made with almonds and green grapes. Serve it along with some fennel or garlic croutons to round it off with that perfect crunch.

Summer Tomato Pasta SaladThe name of this recipe says it all. A great option for summer, light nutritious this salad is best served chilled. A good portion of this salad makes a complete meal, thanks to the al dante pasta added to it!

Cold Chicken with Walnut Sauce This recipe is a great one for chicken lovers. Chicken cooked till tender in a flavoursome vegetable stock topped with a creamy walnut sauce – served cold. A great mix of flavours and textures and the fact that it is served chilled, makes it a must try this summer. You can sandwich the leftovers between crunchy rye or multigrain foot long bread for lunch the next day!

Cold Watermelon Soup Summers bring along with them plenty of fresh fruit. If you don’t want to whip these into a smoothie, a fruity refreshing cold soup is a perfect substitute. A peach and thyme soup or a cold apple soup are delicious alternatives. Mango and Lime Sorbet - Mangoes are in plenty during summer, blend this along with some refreshing lemon to make this luscious sorbet. A definite hit with the kids, you can give street side gola’s a miss this season. This recipe for a Mango chilli Popsicle is equally good.
